When life gives you lemons, make lemon chicken with lemon + herb rice, right? It’s simple to make, and so delicious! I’ve had college students ask about meals that are easy to pack for lunch – this recipe is a perfect example! When I made this recipe, I made two chicken breasts and had one for dinner, packing the other for lunch the next day. The chicken and rice in the image below are layered in a food storage bowl that can be stored in the refrigerator and tossed in a lunch bag the next day. I added in a lemon slice to add a splash of citrus so that it’s as light and fresh even after reheating.

- juice from ½ lemon
- 1 T olive juice
- ½ tsp minced garlic (optional)

- 1 c instant rice
- 1 c water
